instructions:
- crumble the tofu, mix it with oil and bake it for ~30mins. remember to oil up your tray/use parchment paper too.
- cover a tomato with boiling water and leave it there for ~5mins, then take out, peel, and dice.
- heat up a pan with oil and add the onion and bell pepper (chopped, obviously).
- add the garlic (minced) to the pan and fry for ~2mins.
- add the tomato to the pan and fry for ~15mins.
- add your baked tofu, salt, and sauté for ~1min.
- serve with two corn tortillas and avocado (hot sauce is optional).
